Bacon Lattice and Tomato Sandwich

For me, there’s a serious problem with conventional BLT’s; not enough bacon. Sure, you can add more slices — or use thickly cut bacon — but after the first bite, they tend to move around and you wind up wrestling the sandwich into your mouth.

Given that, I am very truly sad that I didn’t think of this: the bacon lattice.

Bakin’ Bacon

Last weekend, most glorious spousal unit and I ventured out to do some exploring and came across a small Farmers’ Market not too far from the house. There aren’t too many vendors there, but the ones that are carry most of what I am seeking: pork, beef, chicken, eggs, salad greens, and tomatoes. Most of the fare is organic in nature.

Noticing one of the vendors has applewood smoked bacon, I made a beeline while fishing out a tenner from my pocket.


Whoever it was that discovered bacon, I bow deeply to your genius. Combining salt curing with smoky goodness with pork fat is just a wondrous thing.

Just a Chicken Sandwich

One of my favorite food things is a chicken sandwich. Not that reconstituted, glued, formed, and neatly sliced stuff, but real chicken. It is one of my favorite pedestrian foods.

For this one, I started with toasted sourdough. The sourdough was then coated with chunky blue cheese salad dressing.

Butternut Squash Soup with…Bacon!

So, when the putz-meister BigDMcC urged me to do Battle Scallops over again, replete with it’s butternut squash side, I really didn’t have any idea of how much squash would be leftover.  What do you do with a puree of squash?  I suppose I could have just used it as a side dish for some other preparation, but I decided it needed to be featured…with some added bacon.  Everything is better with bacon.

Realizing that the vegans and vegetarians out there are probably screaming “How could you?” right about now, all that I can say is that the original preparation already had chicken stock in it.  Put that lasso in your simulated leather saddle bags and ride on back to LeafyTown.
