You may have noticed that I have been a bit preoccupied lately. I didn’t do my normal two posts last weekend and I didn’t do my normal Saturday Morning Post (pun intended) this morning. Well, here is the story…
But first, pan seared tuna:
Sometimes, things just work out. My preoccupation has been with a dinner for 20 that I am putting on tomorrow. It is a relatively casual affair put on for a friend and coworker that transferred from our EU office back in March. He is getting married next week.
So, I have been aging prime rib, some chuck for burgers, making duck confit, and working on a twist on confit that involves pork shoulder. We’ll see how well things go. But, I digress. This is about tuna.
So, whilst on our forth stop during a shopping run this morning, most glorious and I came across a wonderful piece of Ahi tuna (actually, several pieces, but I only needed one). And, since I am going to gorge on red meat tomorrow, I thought I had better take it easy today.
So, when you get a piece of meat this good, you don’t want to mess it up. A simple treatment of lime juice, a little salt, and a sprinkling of sake and then toss it in a screaming hot pan. It was all over in about 15 minutes, start to finish. Most of that was about 10 minutes of marinade time.
It sears on one side for about 45 seconds. Flip it:
Less than another minute and its all over. Just slice and serve:
I doesn’t get any easier than that.
When you spot a piece of fish flesh that looks this good, no matter what else you have going on, make time to enjoy it. It only takes a few minutes.
