I spent hours in the kitchen this weekend and didn’t cook a single meal. All that I managed to get done was some sofregit, caramelized onion, and guajillo chili powder. Then, most glorious spousal unit whips up this dish in about 20 minutes.

Taking some leftover rotisserie chicken and coupling it with prepared chicken mozzarella ravioli (both from Costco no less), she created a truly tasty treat for a Sunday supper.

The queen of comfort food, most glorious is just plain wicked when it comes to putting this kind of stuff together.

She took some brandy and marsala, combined it with cream, added some garlic, some of my prepared caramelized onion, salt, and pequin powder, cooked that down with the chicken, added the cooked ravioli, and tahdah, it was supper time.

Add in a reasonably-priced kick ass wine, well, its a meal that is just hard to top.

The 2008 Kim Crawford Marlboro Sav Blanc scored a strong 91 points with Wine Spectator and came in at number 40 in their top 100 wines of 2008.

Here’s what they say about it:

Fragrant and complex, with a refreshing burst of lime, guava, grapefruit and grass flavors. Wet stone, passion fruitand oyster shell accents add interest, with bright acidity highlighting the vivid finish. Another outstanding Sauvignon from a perennial success. (12/08).

Wine Enthusiast rated it at 90 points as well as making it an Editors’ Choice selection:

This medium-bodied Sauvignon Blanc strums the right chords, combining notes of crushed tomato leaf with citrusy fruit to make a pretty melody. A hint of creaminess rounds out the midpalate, and the wine finishes long, with pristine cleanliness. (03/09)

Even with a little age on it, courtesy of me forgetting we had it in the cellar, this remains a truly great fruit-laden, un-oaked offering from one of New Zealand’s best estates. This is a positively outstanding wine for a hot Texas summer day.

It’s even better with a supper I didn’t have to cook!
