Well, another 80 hour work-week has come and gone and since I haven’t cooked anything in like forever my readership has tapered off. Such a fickle group: readers. If you don’t post something new, they just go away.
How dare you?
So, now I have to try and build things back up again…
Here’s a really tasty sammich that is actually leftovers. Oh god, now I suppose we get to hear the moans and groans from the “I don’t eat leftovers” bunch. Too effing bad. Your loss.
So, when you’re working stupid hours, it helps if you have a most glorious spousal unit to keep you fed.
Sidebar: These spousal unit types actually care about you. I know, isn’t that a weird thing? Someone actually cares about you? I know some of you aren’t worthy of such caring individuals which is why you don’t have one! You know who you are.
Well, I consider myself extraordinarily lucky to have a spousal unit and mine, indeed, is of the most glorious variety. It is sort of a genus and species thing.
So, my dearest one started with a big honkin pork loin. She braised it in milk, adding a little salt, pepper, and some fresh garlic, along with some prosciutto we had lying about in the fridge. You might want to substitute bacon for the prosciutto. I won’t try and stop you.
In the end, it looked like this:
We had a great dinner of sliced pork loin and mashed potatoes. The reduced milky goodness made a great gravy. Pretty simple stuff. It was really great to come home to a home-cooked meal even if it was around 9:30pm.
So now what? We had a large amount of pork loin remnants in the fridge. What could we do with them?
Most glorious said, “Dip some slices in panko breadcrumbs!”
I’m telling you, these spousal unit types are really useful. If you get a good one, they can even think for themselves! Since mine is a really good one, she even thinks for me on occasion. That kind of functionality helps a lot when your mind is a jelloish mass after spending 18 straight hours in an Aeron chair whilst staring at several large LCD screens.
Anyway, we pressed some panko crumbs into a couple of slices of that pork loin. I sprinkled on a tiny bit of salt and pepper, too. They then went into a hot skillet lubricated with a couple of tablespoons of olive oil.
I few minutes later, they got a flippin’:
Doesn’t that just look yummy?
The pork was cooked, so all we really needed to do was heat it through. The panko got nicely browned and added a great crunch to the sandwich.
Dress it up all you want! nom nom nom nom
